• Preheat lava stones for approximately 10 to 15 minutes until the stones have reached full grilling temperature and emit infrared radiation.

• After service, set the grill without any food on it to the maximum level for about 10–15 minutes so that fat and food residues on the grates and stones burn off to white ash.
• The stones should be turned every few days.
• Do not clean lava stones with chemical degreasers or detergents.
• Depending on the workload of the establishment, the stones should be completely replaced every 6 to 12 months.
