Description
Professional Gas Tilting Braising Pan for the Catering Industry
This gas tilting braising pan with an 80-litre capacity is perfect for professional use in large kitchens and the catering sector. It offers a power output of 20 kW, providing strong and even heat distribution, ideal for braising, frying, and preparing sauces. The robust design and high-quality workmanship make it a reliable partner in any commercial kitchen.
High-Quality Materials and Thoughtful Features
The body is made of AISI 304 stainless steel, while the base is crafted from particularly durable AISI 316 stainless steel. This ensures excellent durability and optimal heat conductivity. The pan features a self-balancing hinge with a tilt angle of up to 80°, making tilting and emptying especially easy. An integrated water tap allows for easy filling and rinsing of the container. For maximum safety, a thermocouple monitors the flame and automatically shuts off the gas supply if the flame goes out.
Conclusion and Areas of Application
The gas tilting braising pan is a powerful and safe solution for professional kitchens, particularly suitable for braising and preparing large quantities of sauces. The combination of high-quality workmanship, practical safety features, and ease of use makes it ideal for catering, contract catering, and large-scale kitchens. The option to combine it with other products from the "Lorenzo 900" series further expands its range of applications.
Installation & Operation
- ⚠️ All gas appliances must be connected by a qualified professional.
- ⚠️ An extraction system is recommended to optimise performance.
Cleaning & Maintenance
- Allow the pan to cool down to approximately 50 °C to 60 °C before cleaning to avoid material damage caused by extreme temperature shocks.
- Soak crusts with warm water. Never use steel wool or knives, only soft sponges, brushes, or plastic scrapers.
- After cleaning, thoroughly remove all detergent and cleaner residues with clear water to prevent any residues from contaminating food.
- Clean the spout, nozzle, and lid seals particularly thoroughly, as germs and grease residues tend to accumulate there.
- Never rinse the appliance with a high-pressure cleaner or strong water jet to avoid damage to the electrical and mechanical components.
- Leave the lid slightly open after cleaning to allow it to dry.
