Solid top ranges as the backbone of the hot kitchen

Solid top ranges are commercial cooking appliances with a solid, closed cooking surface; the heat is generated beneath it and distributed across several temperature zones. Unlike ranges with open burners, they let you position pots and pans almost anywhere on the plate.

This design is particularly well suited to restaurants, staff canteens, hotels and production kitchens where pots of different sizes are in use at the same time. Small saucepans, large stockpots and frying pans can be arranged across the available surface as needed. The stored heat supports a steady working rhythm but calls for forward-looking temperature management.

Matching cooking surface and output to real demand

The right size starts with your production programme. What matters is not just the number of dishes, but how many pots are on the range at the same time during the busiest part of service. Key factors include the usable plate width, the number of controllable heat zones, the power range and the dimensions of the pans you use.

A larger solid top gives you more room to manoeuvre, but needs correspondingly more floor space and energy. In a compact restaurant kitchen, a narrower unit with fewer heat zones may be enough. In a large-scale catering kitchen producing soups, sauces and side dishes in parallel, a wider plate and sufficient power reserves often make more sense. For setting down and prepping, suitable stainless steel work tables can be integrated into the work zone.

Building stored heat into your kitchen workflow

The solid plate absorbs heat and releases it comparatively evenly. This thermal inertia supports longer-running cooking processes, but responds less directly to temperature changes than an open gas burner. In practice, a clear layout helps: high heat for bringing to the boil, medium areas for continued cooking and cooler zones for gentle simmering.

During lunchtime production, this means dishes can be moved between temperature zones without tying each pan to a fixed burner diameter. Planning should take heat-up time, residual heat and typical batch sizes into account. For short, highly dynamic cook-to-order work, a different type of range may be better suited; solid top ranges really come into their own in continuous production.

Clarify connection, positioning and base in advance

Depending on the model, solid top ranges run on gas or electricity. Before buying, the gas type or electrical supply, power rating, ventilation and local installation conditions must therefore be confirmed. Depth, unit width and working height also need to match your existing cookline.

Models with an open base keep cookware within easy reach. Enclosed bases provide protected storage, while versions with an oven can combine two functions on the same footprint. The decision depends on your menu and workflow: an oven only makes economic sense if it is used regularly in day-to-day service. Additional extraction canopies must be matched to the heat and exhaust load of the entire cookline.

Keeping solid tops clean and in good condition

Stainless steel cladding makes it easier to clean the area around the unit. On the solid top itself, boil-overs, grease and food residue can burn on at high temperatures. Residues should therefore be removed as soon as possible once the plate has cooled. Suitable cleaning agents and care methods depend on the manufacturer’s instructions, so that the surface is not unnecessarily damaged.

Smooth transitions, accessible edges and enough space in front of and beside the range shorten daily cleaning. Service access points must not be blocked by fixed furniture either.

Quick check for choosing a solid top range

Five specific checkpoints help before you choose a model:

  • usable plate area and number of pots used at once

  • number and controllability of temperature zones

  • gas type or electrical supply, including power rating

  • unit width, depth and integration into the cookline

  • base, oven and required power reserve

A correctly sized solid top range supports repeatable workflows and reduces improvised pan juggling during busy service. Alongside the purchase price, the cost assessment should cover cleaning effort, energy consumption, service access, product availability and spare parts supply. Combining it with cooking pots in suitable sizes makes better use of the available surface and creates a reliable basis for day-to-day kitchen operations.
